Well… It’s cookie time all the time. Am I right?! I saw you nod in agreement. Don’t lie.
Cami wanted to make “shape” cookies so we whipped together these easy sugar cookies in animal shapes. She picked out the rabbit, butterfly, and
chick quail. Now that we have quail, I’d like to think these are Japanese quail now. I also realized that we need a honeybee cookie cutter, chicken cookie cutter, and possibly some garden veggie shapes. Because –you know– veggie shapes make cookies healthier. It’s a fact.
Frühlingskabine Sugar Cookies
1/2 cup butter, softened
2/3 cup sugar (we use rapadura so they taste like brown sugar)
1/4 teaspoon vanilla extract
1 2/3 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour. (Or be like me and throw all the ingredients into the KitchenAid mixer, turn it on high, then roll and cook. Seriously. If I work fast enough, I don’t even refrigerate the dough.)
Preheat oven to 400 degrees F (200 degrees C).
Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6 to 8 minutes in preheated oven. Cool completely.
