Honey Mustard Chicken with Sautéd Green Beans and Beets

Trevor has a little treat for you this morning and hopefully you catch this in time for planning dinner tonight. It’s a little known fact that Trevor is an incredible cook. Mostly because I do all the talking and baking here. But he really knows how to amplify and harness favors in a dish to complement each other. This recipe he created “on a whim” an it’s my new favorite way to eat chicken.

Everything is from our garden except the chicken. No worries! It’s not that squawky Henrietta on our plates… although it should be…

Honey Mustard Chicken with Sautéd Green Beans and Beets
serves 2

3 tbsp olive oil
1 tbsp butter cubed

Coat a sauté pan in olive oil and add butter. Bring to medium heat.

2 skinless chicken breasts
3 tbsp yellow mustard
1/8 cup local honey
1 tbsp minced garlic
Pinch salt
Pinch black pepper

Small bowl, combine well: mustard, honey, and garlic.
Add two lightly seasoned chicken breasts to the oiled sauté pan. Spoon honey mustard mixture onto chicken breasts. Be generous with the sauce. Cover and cook on medium heat for 20 minutes. Remove lid and sear to crisp chicken for about 3 minutes. Flip and sear top side as well.

6 cups fresh green beans
3 beets, chopped
3 tbsp olive oil
1 tbsp garlic, minced
1 tbsp butter

Mix all of the ingredients in a medium-sized pan. Cover and cook on medium-low heat for about 20 minutes, stirring occasionally.

  1. Okay, it’s 6 am and my mouth is watering! That sounds so good! I don’t have any beets…but I do have green beans and chicken – I may just have to make it without the beets…hmmm….
