I call this “cheater” flan because you don’t need fancy ingredients like sweetened condensed milk to make it. All you need are the basics: sugar, milk, vanilla, and eggs. It’s how all recipes should be. Easy.
Get ready for flan!
serves 4-6 or if you’re like me… serves 1
1 cup white sugar
1/2 cup water
3 cups milk
3 eggs, beaten
3 egg yolks, beaten
3/4 cup white sugar
2 tablespoons vanilla extract
Preheat oven to 350*F
In a 9″ round glass baking dish (a glass pie pan works great), mix 1 cup of white sugar and 1/2 cup of water. Microwave for 7-10 minutes or until the sugar mixture starts to turn golden. Do not let the mixture turn brown otherwise your finished caramel won’t taste very good. Remove dish from microwave with a oven mitt and swirl sugar mixture until evenly colored.
In a medium saucepan, bring milk just to boiling over medium heat. Stir hot milk, a little at a time, into beaten eggs and egg yolks, until well combined. Stir in sugar and vanilla. Pour milk mixture into the 9″ round glass dish on top of the melted sugar mixture.
Cover with tin foil. Bake in preheated oven for 40 minutes. Remove tin foil.
Bake an additional 20 minutes, until set (flan is set if an inserted knife comes out clean). Let cool, invert and serve.
